Father's Day

Well today is Father's Day.  I always end to get bummed out because I haven't ever been able to do anything spectacular for Josh or my dad.  I feel bad that I don't have the funds to buy them anything nice or go and do anything fun and different.  I have learned over the years though that they are both appreciative of a simple Happy Father's Day.

As I said our day was nothing totally spectacular.  We went to church, as usual.  My Sunday School class and the Elders quorum enjoyed my lemon squares I made yesterday.  During church I decided that the kids and I could make Josh dinner when we got home.   Well that idea went down the tubes!  Josh decided that he was going to make spaghetti, I told him I was planning on making him something for Father's Day, but since he's insisting on making his own...GO FOR IT!!!  I was rather ticked off!  So he enjoyed his own dinner that he made for himself and the kids.  I came downstairs and tried to take a nap (that didn't last long). 


So after my so-called nap, I decided that I would try to do something once again in the kitchen.  My mind was kinda wandering today while I was thinking about what to make for dinner.  In my thoughts, I thought about my grandma and all the baking she use to do.  Then I thought about her congo square cookie bars she use to make.  So I looked a recipe up for congo squares....Found it of course on the internet. After reading the recipe and figuring I could scrounge up all the ingredients, I headed back into the kitchen.  I asked Nicole if she wanted to help (she needs to learn this stuff too afterall).  So the two of us made congo squares!

So this is the end result of my Father's Day congo squares.  When they are finished baking you are suppose to let the cool completely!  Adam could hardly wait, so he decided to cut into them, hence why part of them are missing from the pan.  Notice the crazy cut?  I had to cut in into smaller pieces.  I had Nicole bring some down to her dad...he liked them too.  If he likes them, I know they turned out good.  Although since they weren't completely cooled off they were a little soft and gooey, but they didn't mind.  So I am happy that they, especially Josh were able to enjoy them.

While they were baking, I decided to call my dad.  I always enjoy talking to him.  He helps me to keep things in perspective.  I was able to tell him how I felt about living here and what has been going on.  He gave me words of encouragement, which I totally appreciate.  Last year he had some health scares, which did scare me a lot.  So far, so good this year, except for a cold he has had for a couple days.  He will be going to the doctor tomorrow for a follow-up visit and will be able to get some meds to help him get better.

Also while thinking about fathers, I can't forget about Eldon.  He is my dad also.  I do miss him very much.  He is in heaven watching over his family.  Not a day goes by that I don't think about him.  I learned so much from him.  I am thankful that he took on the responsiblity of taking care of me like one of his own children.

So in thinking about Fathers...there are all types of fathers.  To this point in my life, I am thankful for all the fathers who have had some influence in my life.
